Fortune cookies are classic after-dinner nibbles, much-loved at the end of a special Chinese meal. With a satisfying snap of their delicate vanilla-flavoured shells, they reveal mysterious messages. Follow this simple recipe from food writer Jenny White and write your own destiny. Ingredients

  • 2 large egg whites
  • 1 tsp vanilla extract
  • 3 tbsp sunflower oil
  • 75g plain flour
  • 1½ tsp cornflour
  • 100g caster sugar

Method

Step 1

Put the egg whites in a mixing bowl with the vanilla extract, oil and 2 tsp cold water. Whisk with an electric whisk for 30 secs until frothy. Sift in the plain flour, cornflour, sugar and a pinch of salt; whisk for a further 30 secs. Cover and chill in the fridge for 2 hrs.

Step 2

Meanwhile, cut out 14 slips of paper, measuring no more than 6 x 1.5cm. Write your fortunes on them and fold in half.

Step 3

Preheat the oven to 180°C/160°C fan/gas 4. Line a baking tray with baking paper. Place a dessertspoonful of the mixture onto the paper and, using the back of the spoon, swirl it around to make a 10cm circle. Repeat to make another circle. Make just 2 at a time, ensuring they’re spaced far apart, as they’ll spread during baking. Bake for 10-12 mins, until golden brown at the edges.

Step 4

Remove one of the circles using a spatula and flip it over. Working quickly, put a fortune in the centre and fold the circle in half, pressing down the edges. Place the straight edge on the rim of a cup; gently pull down the 2 corners to make the shape pictured. Place in the hole of a muffin tin to hold the shape as it cools. Repeat with the second cookie, then repeat the whole process until you’ve used up all the mixture. They’ll keep for up to 3 days in an airtight container at room temperature.
