This fried aubergine is a Middle Eastern-inspired recipe which uses a single aubergine to make a show-stopping side dish. Slices of aubergine are tossed in Middle Eastern spices and shallow-fried to crispy perfection, then served with a sweet and spicy harissa and honey sauce. Ingredients

  • 1 large aubergine, cut into 1cm slices
  • 1 tbsp olive oil
  • 4 garlic cloves, finely chopped
  • ½ tsp coarse ground black pepper
  • 1 tsp ground sumac
  • 1 tsp ground cumin
  • 1 tbsp cornflour
  • 1 litre vegetable oil, for frying
  • 1 tbsp rose harissa paste
  • ½ lemon, juiced
  • 1 tsp honey
  • 3 tbsp pomegranate seeds

Method

Step 1

Place the aubergine slices in a large mixing bowl and add the olive oil, garlic, sumac, cumin, and season with salt and pepper. Mix together well ensuring the aubergine slices are evenly coated in the spices. Then add in the cornflour and mix again.

Step 2

Place a large, deep frying pan over a medium high heat. Add vegetable oil to a depth of 1cm.

Step 3

Turn the heat up to high and fry the aubergine slices in the hot oil in batches for 5 mins on each side or until golden brown. Drain on kitchen paper to soak up any excess oil.

Step 4

Add the rose harissa paste, lemon juice and honey to a ramekin and mix together with a fork. Transfer the aubergine to your serving plate, drizzle over the harissa sauce and top with the pomegranate seeds.
