These easy-to-make, gluten-free sultana scones are a great option to take to a picnic or family outing. They’re ideal for those who need to avoid gluten but want to enjoy a delicious jam and clotted cream-topped treat!

Ingredients

  • 320g gluten-free self-raising flour, plus extra for dusting
  • 60g unsalted butter, chilled and cubed
  • 1 tsp xanthan gum
  • 1 tsp gluten-free baking powder
  • 75g caster sugar
  • 2 large eggs, plus 1 extra, beaten, for glazing
  • 1 tsp vanilla extract
  • 100g whole milk
  • 75g sultanas

Method

Step 1

Preheat the oven to 200°C/180°C fan/gas mark 6. In a food processor, add the flour, butter, xanthan gum, ¾ tsp sea salt, baking powder and sugar and pulse until you get fine breadcrumbs. You can also use your fingertips in a mixing bowl if you don’t have a food processor.

Step 2

Add the 2 eggs, vanilla extract and then the milk in a steady stream, mixing continuously while you add it. Add the sultanas and use your hands to bring the mixture together into a ball of dough.

Step 3

On a flour-dusted surface, roll out your dough to roughly 2cm-thick and cut your scones out using a 4-5cm cutter, then place them on a lined baking sheet. Brush the tops with egg wash and then bake in the oven for 15 mins until the tops are golden brown.

Step 4

Serve warm with strawberry jam and clotted cream.
