Ingredients

  • 1 pear, quartered lengthways and cored
  • 200g butter, softened
  • 80g golden caster sugar
  • 3 large eggs, lightly whisked
  • 200g white spelt flour
  • 1 tsp baking powder
  • ½ tsp mixed spice
  • 120ml maple syrup
  • 1 tsp vanilla extract

Method

Step 1

Preheat oven to 180°C/160°C fan/gas 4 and put 12 paper cases into a muffin tin.

Step 2

Peel two quarters of the pear and chop into small dice, then thinly slice the other 2 quarters, widthways into small triangular slices. Keep separate and set aside.

Step 3

Cream together the butter and sugar until fluffy, gradually add the eggs, then fold in the flour, baking powder and mixed spice. Add the maple syrup and vanilla extract and mix until well combined.

Step 4

Fold through the diced pear.

Step 5

Divide the mixture between the 12 paper cases, top each one with 2 slices of pear. Bake in the oven for 15-18 mins or until puffed, golden and cooked through.

Step 6

Cool on a wire rack. Serve as they are, or for a little extra luxury add a spoonful of whipped cream, sweetened with icing sugar and blueberries or blackberries folded through.
