This simple recipe will have you making honey butter to enjoy with almost any meal. Softened butter is mixed together with honey, chilli, lemon and garlic to form a moreish butter that’s perfect for frying succulent sea bass. Serve up your fabulous fish on a bed of fresh wild rocket and watercress.

Ingredients

  • 75g unsalted butter, softened
  • 1 lemon, juiced
  • 1 tsp fresh parsley, finely chopped, plus more to serve
  • 1 tsp honey
  • 2 garlic cloves, finely chopped
  • ½ green chilli, finely chopped
  • 4 sea bass fillets
  • 85g watercress
  • 85g wild rocket

Method

Step 1

To make the chilli honey butter, mix together the softened butter, ½ the juice of the lemon, parsley, honey, garlic and chilli in a bowl. Mix together well, then set aside.

Step 2

Season the sea bass with 1 tsp salt and 1 tsp coarse black pepper. Add the oil and butter mixture to a large frying pan over a medium heat and cook until the butter has melted. Add the sea bass fillets skin side up. Cook for 4 mins on each side then take off the heat.

Step 3

Serve your fish on a bed of watercress and rocket, adjust seasoning with lemon, salt and pepper to taste and enjoy.
