Ingredients

  • 500g new potatoes, boiled, still firm
  • 100g petits pois, cooked
  • 3 spring onions, finely chopped
  • 8 cornichons, finely chopped
  • 4 eggs, hardboiled, peeled and diced
  • 100ml mayonnaise
  • 4 tbsp white wine vinegar
  • 2 tbsp extra virgin olive oil

Method

Step 1

Add the potatoes, peas, cornichons, spring onions and boiled eggs to a large bowl.

Step 2

Whisk the mayonnaise, vinegar, olive oil and some salt and pepper together, before gently folding into the salad. Leave to chill and serve.

Step 3

Tip: add shredded roast chicken for our take on 'olivieh salad', a delicious traditional persian dish.
