Baker, food writer and Bake Off champion Edd Kimber – aka The Boy Who Bakes – brings campfire vibes to the table with this fun and clever S’mores Skillet Cookie. For the full flame-licked effect, pop the pan under the grill briefly, until the mallows are temptingly charred and golden. Ingredients

  • 250g plain flour
  • ½ tsp baking powder
  • ½ tsp bicarbonate of soda
  • ½ tsp sea salt flakes, plus a sprinkling
  • 110g unsalted butter, diced
  • 110g light brown sugar
  • 110g caster sugar
  • ½ tsp vanilla bean paste
  • 1 large egg
  • 50g plain digestive biscuits, broken into small pieces
  • 8 giant marshmallows, cut in half (use vegetarian mallows, if required)
  • 100g dark chocolate, roughly chopped
  • 12 scoops vanilla ice cream, to serve (optional)

Method

Step 1

Preheat the oven to 180ºC/160ºC fan/gas 4. In a bowl, mix the flour, baking powder, bicarbonate of soda and sea salt flakes. Melt the butter in a 24 cm non-stick, ovenproof frying pan; tip into a bowl.

Step 2

Add the light brown and caster sugars and the vanilla to the butter and mix well with a wooden spoon or using the paddle attachment of a stand mixer. Beat in the egg until combined, then add the flour mixture. Continue mixing until a smooth cookie dough is formed. Mix in two-thirds of the digestive pieces.

Step 3

Spread two-thirds of the cookie dough into the frying pan and press into an even layer. Dot the marshmallows and remaining digestives in and around; fill the gaps with the remaining dough. Scatter over the chocolate and sprinkle with sea salt flakes. Bake for 30 mins or until golden. Serve warm with ice cream, if liked.
