Every barbecue needs a filling and fabulous side dish and these Smoky Potatoes from food writer and live-fire enthusiast Helen Graves fit the bill. They’re pre-cooked on the hob but finished over the coals, which results in crackly, smoky skins with beautifully fluffy centres. Ingredients

  • 500g baby new potatoes
  • 1 drizzle extra virgin olive oil (optional)
  • 1 sprinkle of sea salt flakes

Method

Step 1

Parboil the potatoes in a large pan of boiling salted water for 5 mins, then drain and pat dry.

Step 2

Grill/griddle on high for 15-20 mins, turning, until tender and lightly charred. Dress with a little oil and a sprinkling of sea salt, if you like.
