- Spinach and Bacon Salad with Blue Cheese…
Ingredients
- 8 streaky bacon rashers
- 225g fresh baby spinach leaves,
- 225g mushrooms, sliced
- 2 spring onions, sliced
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 60g blue cheese, crumbled
- 2 tsp dijon mustard
- 2 tsp shallots, finely chopped
- 1 pinch sugar
Recipe tips / Prepare ahead
The dressing can be made up to 48 hours in advance, then chilled.
Method
Step 1
Heat a frying pan and fry the bacon until crisp, turning occasionally. Drain on paper towels, cool and crumble, then set aside.
Step 2
In a large salad bowl, combine the spinach, mushrooms and onions. Add the bacon and toss to mix.
Step 3
To make the dressing, place all the remaining ingredients in a lidded jar and shake well to combine. Drizzle over the salad and toss to combine.
