Sticky Lemon and Garlic Drumsticks with Peas and Couscous

Ingredients

  • 1 tbsp runny honey
  • 1 garlic clove, crushed or grated
  • 1 tbsp olive oil
  • ¼ tsp mixed herbs
  • ½ unwaxed lemon, zest and juice
  • 1 tbsp cornflour
  • 4 chicken drumsticks
  • 150g couscous
  • ½ low-salt chicken stock cube (optional)
  • 120g frozen peas, cooked
  • 120g green beans, trimmed

Method

Step 1

To make the marinade, mix the honey, garlic, oil, herbs, lemon zest and juice in a large bowl with plenty of black pepper. Add the cornflour and mix until combined. Add the chicken and toss to coat. Cover and put in the fridge for up to 8 hrs or use right away.

Step 2

Preheat the oven to 220°C/ 200°C fan/gas 7. Arrange the drumsticks in a lined roasting tin and bake for 30-35 mins, until golden and cooked through.

Step 3

Meanwhile, cook the couscous as per the pack instructions (crumble in the stock cube, if using). Microwave the peas and beans in a covered bowl with a splash of water on high for 4 mins (or boil). Drain and separate the veg.

Step 4

Remove the drumsticks to a plate. Add the drained beans to the roasting tin and toss.

Step 5

Fluff up the couscous with a fork and fold through the peas. Serve with the drumsticks and beans. Leftovers will keep in a chilled airtight container for up to 3 days.

Tips or serving suggestions

Allow time for marinating if you can, although it’s not essential. Serves 4 children.
