This recipe for the ultimate tiramisu comes from the clever cooks over at MOB Kitchen. Tiramisu is an Italian coffee-flavoured dessert that literally translates to ‘cheer me up’ and it’s to understand where it got its name. Made using savoiardi biscuits, also sometimes called ‘ladyfingers’ dipped in coffee and layered with mascarpone and flavoured with cacao. The ‘ultimate’ in this recipe’s name comes from the addition of the sweet Italian liqueur, amaretto for an added boozy kick and punch of almond flavour. If you’re making this for kids, just leave out the amaretto for a classic and delicious tiramisu.

Ingredients

  • 4 eggs, seperated into yolks and whites
  • 90g caster sugar
  • 500g mascarpone
  • 300ml strong coffee
  • 50ml amaretto
  • 1 tbsp cocoa
  • 200g savoiardi biscuits

Method

Step 1

Put the egg whites into a mixing bowl or bowl of a stand mixer and the yolks into a small bowl. Add half the sugar to the whites and whisk into soft peaks. Set aside.

Step 2

Add the remaining sugar to the yolk and whisk until pale. Add the mascarpone and whisk again until smooth. Carefully fold the egg whites into the mascarpone mix a bit at a time, trying to knock out as little air as possible. Brew 300ml of coffee, add the amaretto and pour into a small tray.

Step 3

Line a baking tray with kitchen paper. Dip the savoiardi biscuits into the coffee mix for about 3 secs, then place on the tray with the paper.

Step 4

Make a single layer of biscuits across the bottom of the tiramisu dish. Now spread half the cream over the biscuits. Repeat with the second layer of biscuits and remaining cream.

Step 5

Cover with cling film and leave to sit in the fridge for at least 4 hrs or overnight.
