A subtle twist to a traditional English classic pudding makes this crumble a family favourite.  The sweet and crunchy topping oozes into the soft and sharp fruit flavours to create a mouth watering dessert. Serve generously with warmed custard and it's sure to go down a treat.

Ingredients

  • 100g sugar , plus 2 tsps, plus an optional 2 tsps
  • 100g butter, chilled and cut into cubes
  • 200g pastry (plain) flour
  • 1 pinch salt
  • 25g flaked almonds
  • 25g raisins
  • 1 bramley cooking apple
  • 225g blackberries

Method

Step 1

Preheat the oven to 180C/Gas 4.

Step 2

Remove the butter (already cut into small cubes) from the fridge and start to mix with the sugar using only your fingertips. As the ingredients start to mix add the flour and continue working together with your fingertips until well blended. Add a pinch of salt and rub into the mix.

Step 3

Now add the flaked almonds and the raisins and lightly mix into the crumble.

Step 4

Peel and cut the large Bramley apple into quarters. Remove the core then cut each quarter in half lengthwise then cut each segment into three pieces leaving you with small chunks of apple. Place these into the bottom of the oven dish.

Step 5

Add the blackberries on top of the apple chunks spreading evenly around the dish. Taste check the blackberries and if they are particularly sharp you may wish to sprinkle over the optional 2 teaspoons of sugar. Now cover it with the crumble topping making sure it evenly covers the fruit. Finally sprinkle over 2 x teaspoons of sugar and put in the oven for 50 minutes.

Step 6

Serve when the crumble topping is golden browned.

Step 7

Remove from the oven and serve with warm custard.
