Chicken Burritos

These tasty burritos are great served hot or cold. They can be a little messy to eat though, so rememeber to pack a serviette or tissue! Once cool store in the fridge.

Ingredients

  • 2 chicken breasts, skinless, boneless and thinly sliced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp mild chilli powder
  • ½ tsp oregano
  • 1 clove garlic, finely chopped
  • 1 red onion, cut into slim wedges
  • 2 peppers, one red and one yellow, cut into thin strips
  • 3 heaped tbsp salsa
  • 3 heaped tbsp guacamole
  • 6 wraps

Method

Step 1

Place the chicken in a bowl along with 1 tbsp of the oil, the cumin, chilli powder, oregano and garlic, season with salt and freshly ground black pepper. Mix well to coat and set to one side.

Step 2

Heat the remaining oil in a large frying pan and cook the onions and peppers until tender. Add the chicken and stir fry for approx 4-5 minutes until the chicken is cooked. Remove from the heat.

Step 3

Divide the salsa between three of the wraps and spread. Repeat with the guacamole and the remaining wraps.

Step 4

Place a spoonful of the chicken mixture in the centre of one of the wraps, folding to enclose the filling. Repeat with the remaining chicken mixture and wraps.

Step 5

Lightly oil a frying pan and heat then add the folded wraps and cook for 1-2 minutes each side, until golden. Serve hot or cold, with salad, extra salsa and guacamole & tortilla chips.
