This Mexican-inspired kale, sweet potato and avocado salad is the perfect combination of sweet and spicy. Sweet potato is marinated in cumin, paprika, garlic powder and cayenne pepper and roasted to perfection. It is then tossed together with kale, sweetcorn and a homemade spicy tomato dressing and served with slices of avocado.

Ingredients

  • 2 medium-sized sweet potatoes, peeled and cut into 2cm chunks
  • ½ tsp ground cumin
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper
  • 3 tbsp olive oil
  • 1 large tomato, roughly chopped
  • 1 lime, juiced
  • ½ red chilli, thinly sliced, plus extra to serve
  • 150g sliced kale, washed and dried
  • ½ red onion, sliced
  • 1 tin (400g) sweetcorn, drained
  • 1 large avocado, sliced

Method

Step 1

Preheat the oven to 200°C/180°C fan/gas mark 6.

Step 2

In a large bowl, add the sweet potato, cumin, paprika, garlic powder, cayenne pepper, 1 tsp salt and 1 tbsp olive oil, toss to combine, then pour onto a roasting tray and roast in the preheated oven for 20 mins. While the sweet potato is in the oven, make the dressing by placing the tomato, lime juice, chilli, the remaining 2 tbsp of olive oil and ½ tsp of salt into a blender and pulse until smooth.

Step 3

Remove the sweet potato from the oven and leave to cool for 10 mins. Then, in another mixing bowl, add the kale, red onion, sweetcorn and sweet potato. Drizzle the dressing over the salad and toss together, ensuring the entire salad gets a good coating of the dressing.

Step 4

Serve with sliced avocado and the extra sliced red chilli.
