This recipe makes for a delicious side dish, but also works perfectly as a toast topping for a quick lunch or comforting and fuss-free dinner – especially on a chilly day. Alternatively, try it tossed with pasta for a more substantial meal. To make it vegetarian, try swapping the gorgonzola for a different blue cheese that doesn't include animal rennet.

Ingredients

  • 1 tbsp olive oil
  • 250g oyster mushrooms
  • 2 cloves garlic, finely chopped
  • 100g gorgonzola, cut into cubes
  • 50ml double cream

Method

Step 1

Heat the oil in a large frying pan and cook the mushrooms over a medium heat for 5 mins to soften.

Step 2

Add the garlic and cook for another couple of mins, then stir in the cheese and cream and cook until the cheese has melted and the sauce is thickened. Season and serve as tapas, on top of toast, or toss with pasta.
