All you have to do to make this hearty, autumnal salad is throw all the ingredients into a bowl and mix. You might find you already have some of the ingredients in your storecupboard too, like chickpeas and sultanas. With zingy lemon, rich sundried tomatoes and fresh, leafy herbs, it makes for an ideal lunch or a colourful part of a filling evening meal.

Ingredients

  • 400g chickpeas
  • 1 garlic clove, grated
  • 2 spring onions, finely chopped
  • 1 handful coriander leaves, chopped
  • 1 handful parsley leaves, chopped
  • 1 handful sultanas
  • 70g sundried tomatoes, chopped
  • 1 lemon, juiced
  • 1 tbsp extra virgin olive oil
  • 1 handful almonds, toasted and chopped

Method

Step 1

Take a large bowl and add the drained chickpeas, garlic, spring onion, coriander parsley, sultanas and sundried tomatoes.

Step 2

Squeeze over the juice of 1 lemon, add 1tbsp extra virgin olive oil, season to taste and mix everything together to coat.

Step 3

Toss a handful of toasted, chopped almonds through just before serving so they keep their crunch.
