More and more people are exploring alternatives to meat and these veggie balls in ajvar sauce are a winner! Red beans are a high source of fibre, low in fat and rich in proteins, making them a great healthy option. Serve them with pasta of your choice. We recommend this as lunch or dinner for just one or the whole family.

Ingredients

  • 250g kidney beans, or cannellini beans
  • 1 onion, finely chopped
  • 1 handful fresh parsley, chopped
  • 2 tbsp Granny’s Secret Ayvar
  • 4 tbsp ground flax seeds
  • 600g tomato puree, finely chopped, peeled tomatoes
  • 1 handful fresh basil, chopped
  • 2 cloves garlic, crushed
  • 1½ cups vegetable oil

Method

Step 1

Use a blender and mix beans, onion and parsley, into a thick paste.

Step 2

Add the ayvar of choice (try the spicy tomato variety) and seasoning.

Step 3

Gradually add the ground flax, one spoon at a time, to thicken the paste. Form the paste into equal sized balls, add flour if needed to make them less sticky.

Step 4

Pan fry veggie balls in hot oil just to brown.

Step 5

Tomato Sauce: finely chop basil and quickly sauté.

Step 6

Add the tomatoes and whole garlic cloves. Simmer for 15-20 minutes.

Step 7

Add seasoning to taste.

Step 8

Toss the veggie balls in the sauce and bake in the oven to heat through.

Step 9

Serve with pasta of choice.
