A must for cheese on toast lovers who want to take things up a gear, this Halloumi, Beetrootand Hot Honey Toast combines sweetness, smokiness and spice in every mouthful. Whether you’re after a comforting brunch or an easy supper, this ticks all the boxes – and it’s ready in 10 mins flat

Ingredients

  • 150g halloumi , sliced
  • 1 tsp olive oil
  • 2 tbsp hot honey
  • 4 slices sourdough
  • 4 heaped tbsp smoked houmous
  • 12 slices cooked beetroot
  • 1 handful wild rocket
  • 10g mint leaves

Method

Step 1

Fry the halloumi in olive oil for 2 mins each side, until golden.

Step 2

Meanwhile, heat the hot honey in a pan for 2-3 mins until syrupy; toast the sourdough. Spread each toast with 1 heaped tbsp houmous and top with the slices of beetroot.

Step 3

Cut the halloumi into pieces and arrange on top of the beetroot. Then drizzle with the hot honey, scatter over the rocket and mint leaves and get stuck in.
