This delicious and easy to make potato and caramelised onion pie is the perfect hearty recipe to keep you warm this winter. Full of sticky garlicky onions covered with melted blue cheese and lots of potatoes, too. It uses great value Ocado ingredients to make a very affordable meal that doesn’t skimp on flavour. Wrapped up in crispy puff pastry for the perfect winter pie. This is an ideal meat-free Monday meal - with leftovers for lunch on Tuesday - or as a warming vegetarian Sunday dinner after a refreshing walk in the woods. If you’re not a fan of blue cheese, you can use a mature cheddar or gruyère instead.

Ingredients

  • 3 large onions, thinly sliced
  • 250g roll puff pastry
  • 450ml vegetable stock
  • 4 cloves of garlic, minced
  • 1 small handful of thyme
  • 3 potatoes, unpeeled, chopped into small cubes
  • 100ml double cream
  • 200g gorgonzola, crumbled
  • 1 egg, beaten
  • 1 large glug of oil

Method

Step 1

Preheat the oven to 200°C / 180°C fan / gas 6. Put the sliced onions in a large pot with a large glug of oil. Cook on low - medium heat for 45 mins stirring regularly until they are deep golden brown and caramelised.

Step 2

Roll out the puff pastry so it fits the size of your pie tin.

Step 3

Once the onions are caramelised add in the garlic and cook for 1 min until fragrant. Pour in vegetable stock, thyme, along with the potatoes and bring to a boil. Finish with the double cream and season generously with salt and pepper.

Step 4

Stir in the gorgonzola and pour the mixture into the pie tin.

Step 5

Brush the top of the pie crust with a beaten egg and pop this in the oven for 30 mins or until the pastry is golden and puffed. Allow to cool for 15 mins and then serve.
